Profile Lune Noire pours a clear dark brown (with garnet highlights) adorned with a light, dissipating head. Expect nutmeg, mild chocolate, dark fruits, and funk on the nose. A light body with pronounced brightness delivers flavours of stewed fruits, caramel, and saison characteristics with added funk on the palette. It finishes dry with a pleasant graininess. Noteworth Ingredients Tyler used Barnhammer’s pure Brettanomyces culture and we supplied our house Saison yeast along with additional Brettanyomces cultures to create this unique drinking experience. Food Pairing Cherries, dark fruit, and burgers under moonlight. Backstory Before we had our own brewery, Tyler and Sable Birch graciously allowed us to brew our beer in their space. We’re eternally grateful to Barn Hammer Brewing and cherish our times together at 595 Wall Street. It was during this time that we brewed a collaboration black saison called ‘Lune Noire’ which won the silver medal at the 2018 Canadian Brewing Awards.
